Taste of the County: Chicken Quesadillas

Chicken Quesadillas

2 Boneless Skinless Chicken Breasts (cooked and cut into 1/2 inch strips)
1 Green Bell Pepper (seeded and cut into strips)
1 Small Onion (cut into strips)
1 TBLS Chopped Garlic
1 1/2 Tsp Ground Cumin
1 Small Jar of Salsa
1-1/2 Pt. Sour Cream (optional)
1 8 Oz Bag Shredded Cheddar/Monterey Jack Cheese
3 TBLS Veg. Oil or Butter
4-10 Inch Flour Tortillas

In square pan put 1 TBLS veg. oil, green peppers, onion and garlic. Cook over medium high heat until softened. Add chicken, salsa (2 TBLS) and cumin. Stir until well mixed. Set aside to cool. Place 4 tortillas on table. Divide chicken mixture on bottom half of tortilla. Divide shredded cheese evenly over chicken. Fold top of tortilla to form 1/2 moon. In Large frying pan add remainder of oil. Heat to medium heat. Place 2 of the prepared tortillas in the pan and cook until lightly browned. Repeat on other side. When cooked place on cutting board and cut into triangles. Serve hot with salsa and sour cream.
