Taste of The County: Mexican Rice Bowl

Mexican Rice Bowl
Red and Green peppers
1 15 ounce can of black beans
1 15 ounce can of corn
Shrimp or chicken (can use meat of choice)
1-1 ½ Cup Rice
1 Lime
Fajita Seasoning to taste
Sour Cream to taste
Shredded Cheese to taste
Salsa to taste

Sautee peppers for two or three minutes. Add drained and rinsed black beans and drained corn to the Sautee pan and heat through. Then add shrimp and heat through. Precook rice then add to Sautee pan with other ingredients. Add fajita seasoning to taste. Allow to cook for a few minutes while mixing seasoning into dish. Squeeze ½ a lime over the mix and stir. Put into a bowl and add whatever toppings you enjoy to taste.
