Taste of the County: Hunter Style Chicken Sandwich

Hunter Style Chicken Sandwich
4 / 5 -6 oz Chicken Breast ( flattened slightly w/ meat mallet .Optional )
4 Onion or Bulkie Rolls halved
½ Lg Onion sliced into strips
1 Lg Green Bell Pepper sliced into strips (same size as onions)
1 Tbls Fresh Chopped Shallots
3 Tbls Fresh Chopped Parsley
2 Tbls Fresh Chopped Rosemary
3 Lg Cloves Fresh Minced Garlic
1 Tbls Fresh Chopped Thyme
2 ½ Tbls Olive Oil
1 Tbls Lemon Juice
4 Slices of Provolone Cheese
Salt & Pepper to Taste

Mix all Herbs and garlic together and split in half . Place ½ the herbs , lemon juice and 1 ½ Tbls Olive Oil in a baggie with chicken breasts . Let Marinate for 1 -2 hrs . Put 1 Tbls olive oil in saute pan on med heat . Add peppers & onions and cook until soft . Add remaining herbs & cook for 30 seconds until well mixed . Salt & pepper to Taste and keep warm. Cook chicken in saute pan or grill until done . Rolls can be toasted also.
Once chicken is done lay open the rolls and place cheese on bottom half followed by chicken then pepper & onion mix .
Place top bun on and ENJOY ! ! !
