Taste of the County: Mixed Berry Cobbler

Mixed Berry Cobbler

6 Cups Mixed Berries
Juice of 1 Lemon
1/2 Cup Sugar
2 TBSP Cornstarch
1/2 Tsp Cinnamon
1 Tsp Ground Ginger

Ingredients for Topping:
2 1/4 Cup Flour
1/2 Cup Packed Brown Sugar
2 Tsp Baking Powder
1 Tsp Salt
1 Tsp Baking Soda
6 TBSP Cold Unsalted Butter
1 Egg
3/4 Cup Heavy Cream
1/4 Cup Chopped Crystallized Ginger

Combine all of the first set of ingredients in a bowl and toss to coat the berries evenly. Spread the mixture evenly in a greased 9x13 pan.

Stir together all the dry ingredients. Cut in the cold butter until the mixture is coarse consistency. Whisk together the heavy cream and egg. Add the egg mixture to the dry ingredients and gently mix together until the mixture holds together.

Place the topping in pieces over the berry mixture evenly. Sprinkle with additional sugar if desired. Bake in a 375 degree oven until the top is golden brown and the berry filling is bubbling, about 35 minutes.
